At the request of my mother and my friend, I finally dove into the world of coconut macaroons. I don't have much experience with coconut macaroons. It wasn't until (very) recently that I could even stand the texture of coconut, so I had no idea what they were supposed to taste like, look like, or what the consistency was supposed to be like.
Needless to say I think they came out pretty well. Dare I say I'm in love? Coconutty, not too sweet, chewy tasty little treats. I may have to add these to my nonexistent cookie menu! I want to try to incorporate different flavors into them like lemon and chocolate. I may be on to something...
